I know MANY basque recipes; I can't tell you some info.
In esence, basque food is poor people's food, so most of recipes are easy to medium dificult to do, but they're tastefull. The secret, as you know, is the ingredients quality and the correct apply of temperature and time (and some other secrets).
If you want my advice, they're 3 basque esentials:
Hake in green sauce (as my mother did).
codfish on pil pil sauce (EASY to do, GREAT TO TASTE). A great secret of us.
And, maybe you don't believe but spanishe fried eggs are one of the best things on the world.
Y can't understand why whe do that only in spain.
But they're many many recipes to try (many of them fish based, because one of principal economic activities here was fishing). Fisherman's recipes are simple but great.
Don't forget the Basque Pastry (from the french part of basque country). INCREDIBLE.
If you can find that book translated, that's the book wich anybody use to consult forever (my mom included).
