Re: Validation

Almost everything is accurate, down to the smallest details.  The only discrepancy is that on The Bear, everyone is called chef.  That's not right.  In New Orleans, it's only the Executive Chef, Chef de Cuisine, and Sous Chefs that are called that.  Especially in a town with the history and respect ...

Validation

Last night, dinner service held the potential for massacre all night long.  Just a perfect storm of everything you work to avoid, but once in awhile must surmount anyway, despite best efforts.  For those that don't know, the sous chef runs service from the pass through window, which is where the kit...

Re: Who else's intuition has improved with age?

Great posts!    I’m living much the same as I did in my 40s and 50s, some meds excepted.    Aware can’t continue as such for ever, however if I can keep fit/working, my relationship in good shape, lead a balanced life,  participating in active team sports, playing the odd gig, whilst still enjoying...

Who else's intuition has improved with age?

OK, maybe this is a stupidly titled post.  After all, isn't our intuition one of the very few attributes that's supposed to improve with age?  Probably for most that's case, but I'm very surprised that mine has, because I've had a career and lived the life that came with it, in an industry and locat...

Re: All I ever wanted

I have my own style that I now recognize when I hear it throughout my recorded music.  That said, I'm still working on shit, trying to get better. What I realized is that even if/when I do improve, my style doesn't really change. I just add another crayon or two to my box.    Dave, my recent improv...

Re: Is anyone doing anything? (musically)

I've got a song that I'm recording next month.  I've got the musos I want on the session, too.  The closest comparison would be that it's similar to Johnny Guitar Watson's 70s and 80s funk era.  I know I'll get a solid track from this, with the players involved.

All I ever wanted

When I was little, like most of us, I had all the fantasies and the imagined future of stardom when I fell in love with my guitar.  I started playing at 7 years old, and I had the advantage of being taught by a teacher that was also an otherworldly talented player, which was good for me. I spent 3 y...

Re: I've made progress

The work isn't for everybody, but if you're the sort that's built for it, there's a fulfillment and gratification aspect that can't be bought.  It's a great feeling when you finish service with the knowledge that your guests left satisfied and hopefully with a lasting memory.  In this town, there's ...
